Fruitcake – most people either love it or hate it. But if you have never had a home baked, made with love, properly aged fruitcake then you really don’t know fruitcake. The recipe I use has been around for 3 or 4 generations now. I grew up with the anticipation of biting into a rich, sweet piece of fruitcake every Christmas. And it is not Christmas with out fruitcake. I can remember plates of it set on side tables during family gatherings. I remember the smell of it baking and watching my mother carefully wrap and store the fruitcake until it was time to eat it. Properly stored fruitcake should be given a small quantity of brandy or rum poured over the top of it every couple of weeks until it is aged. This preserves it and moistens it, adding to the rich, decadent flavor.
